The Truffle

White Truffle
The white truffle, also known as the “diamond of the kitchen”, is one of the most prized and enchanting treasures of Italian cuisine. Its fame is such that it attracts food enthusiasts from every corner of the globe, eager to experience its unique fragrance and delicate flavor. The history of the white truffle dates back centuries, when it was considered a delicacy by aristocratic and noble classes. Today, it has become a symbol of luxury and sophistication in international cuisine.
What makes white truffle so special is its intense and distinctive aroma, reminiscent of garlic, cheese, honey, and spices. Its delicate, buttery texture literally melts in the mouth, providing a unique and unforgettable tasting experience.

Tartufo Nero Pregiato
The Black Winter Truffle, a jewel of Italian culinary tradition, is cherished worldwide for its refinement and versatility in the kitchen.
Characterized by an irregular surface and deep black flesh, the prized black truffle releases a persistent and enveloping aroma that makes it a highly sought-after ingredient among gourmets and cooking enthusiasts.

Summer Black Truffle
The summer truffle, also known as “scorzone truffle“, is a true culinary delight. Although less well-known than its illustrious winter counterpart, the summer black truffle has a unique character and extraordinary flavor that make it a prized choice for all truffle lovers.
The summer black truffle is characterized by a rough, irregular surface and a light brown or beige flesh. It primarily grows during the summer months, from June to November, and can be found in various Italian regions such as Marche, Umbria, Molise, and Tuscany. Its aroma is less intense compared to the winter black truffle, but its robust, earthy flavor makes it an extraordinary ingredient for a wide range of dishes.

Bianchetto Truffle
The bianchetto truffle, is a gastronomic treasure that deserves to be discovered and appreciated by every respectable gourmet. Though less well-known than the famous white truffle, the bianchetto has its own unique characteristics and an extraordinary flavor that make it a delicacy not to be underestimated.
The bianchetto truffle is a smaller and slightly less fragrant variety compared to the white truffle, but it is no less valuable. It is characterized by a smooth surface and a white or beige flesh, growing primarily during the summer months, from May to September. Its smaller size and more delicate aroma make it perfect for a variety of light and summer dishes.
