Over a century ago, in the small Norman village of Lonlay l’Abbaye, Virgile Fouilleul, the baker, between two batches of bread, would gently bake shortbread biscuits over a wood fire in molds made by the village carpenter. They were sold on site or sent to soldiers at the front…


The reputation of the Sablé de l’Abbaye spread quickly throughout the region, and the bakery was already shipping them to Paris. However, the modest bakery in Lonlay l’Abbaye was unable to provide work for Georges, his son, and his son-in-law, who were also bakers. Michel Lautour and Michel Lebaudy therefore decided to join forces to create a biscuit factory and expand the production of shortbread. It was 1964, and the Biscuiterie de l’Abbaye began its history in Lonlay l’Abbaye.
